Founded by Jeremy and Emma Borg, drawing inspiration from the African Wild Dog, the Painted Wolf pack is a community of talented individuals who bring the best available grapes, technical and practical skills to Painted wolf, allowing them to craft a range of delicious, authentic satisfying wines. By harnessing the energy and expertise of a number of talented individuals they have created a company which not only crafts delicious wines, but which strives to be socially and environmentally responsible, nimble, effective and most importantly fun and rewarding to work for and be associated with.
An elegant wine with mineral, nettle and tropical fruit aromas and flavours and a clean vibrant finish. The wine is really beautifully balanced. The Den wines are comfort wines, and this wine delivers just that.
Great with Japanese dishes such as sushi and sashimi, seafood-based steamed and fried dim sum and smoked salmon, particularly if the smoke is delicate
Sauvignon Blanc is harvested from a small 1 hectare block of vines on Southern Cross farm in Simondium, Paarl. The vineyard at the base of the Simonsberg mountain has decomposed granite soil. The vineyard was planted in 1986 and is not irrigated.
This is a warm site, and the lack of irrigation makes sensitivity to the correct picking time especially important. The wine was made at Rheebokskloof. It received the best possible attention, being blanketed with CO2 throughout the crushing and pressing process. 8000 litres was fermented in stainless steel, and a further 1000 litres in 2nd fill French oak 500 litre barrels.
