In the Vineyard: We use traditional methods like natural yeast and whole berry fermentation to create handrafted wines typical of the terroir and microclimate of our farm at the border of the Klein Karoo The grapes are all harvested and selected by hand. Our wines are all wild-yeast fermented (and, for the red wines, are fermented on the whole berry) and matured at least 12 months in (neutral) French cask. These limited release wines are grown on the deep, red Karoo soils as nature intended, with minimal interference.

In the cellar: Fermentation at 16 degrees for 4 weeks and kept for 3 months on lees.
